Cool chill and fold in a ¹⁄₂ pint of cream with a tablespoon of powdered sugar. Turn into a chilled freezer and when the mixture begins to congeal stir with powdered sugar. Continue freezing until firm and smooth.

Strawberry Ice Cream.

3 pints of thin cream, 2 boxes of strawberries, 2 cups of sugar, 4 grains of salt, wash and hull the berries, sprinkle with sugar, cover and let stand 2 hrs. Wash and squeeze through cheesecloth, then add salt. Freeze cream to the consistence of a mush, add gradually fruit juice and finish freezing.

DUMPLINGS, Sussex, or Hard

Ingredients.—1 lb. of flour, ½ pint of water, ½ saltspoonful of salt. Mode.—Mix the flour and water together to a smooth paste, previously adding a small quantity of salt. Form this into small round dumplings; drop them into boiling water, and boil from ½ to ¾ hour. They maybe served with roast or boiled meat; in the latter case, they may be cooked with the meat, but should be dropped into the water when it is quite boiling. Time.—½ to ¾ hour. Sufficient for 10 or 12 dumplings. Seasonable at any time.

RECIPE FOR LUNCH: SHRIMP TOAST

SHRIMP TOAST

Mix in a stewpan the yolks of two eggs, a tablespoonful cream, one teaspoonful anchovy sauce. Soak in this a thick round of buttered toast. Peel some shrimps and place on the toast and serve very hot.

RECIPE FOR BREAKFAST: SCOTCH DRIED HADDOCK

SCOTCH DRIED HADDOCK

Hold the haddock in front of the fire till it is warm, then remove the skin at the back, beginning at the tail. Put it into a grill and let it cook in front of the fire for five or six minutes. Put butter and pepper; serve very hot.

Imported Dish of the Day: Russian Stewed Duck.

Clean and cut the duck into pieces and season with salt and pepper; then cut 1/2 pound of bacon into dice pieces and put in a large saucepan with 1 onion and 2 carrots. Cut fine 1 herb bouquet, a few cloves and a few peppercorns; add the duck. Let all cook slowly with 1 cup of stock until tender; then add 1 cup of red wine. Thicken the sauce with flour, boil and serve hot.

RECIPE FOR DINNER AND TEA DISHES: BEETS

BEETS

Wash the beets but do not peel them. Boil them gently for three-quarters of an hour, or till they can be pierced easily with a straw. Then skin them and slice in a hot dish, dusting each layer with a little salt, pepper, and melted butter. Those which are left over may have a little vinegar poured over them, to make them into pickles for luncheon.

DUCK, Wild, to Carve

As game is almost universally served as a dainty, and not as a dish to stand the assaults of an altogether fresh appetite, these dishes are not usually cut up entirely, but only those parts are served of each which are considered the best flavoured and the primest. Of wild fowl, the breast alone is considered by epicures worth eating, and slices are cut from this, in the direction indicated by the lines, from 1 to 2; if necessary, the leg and the wing can be taken off by passing the knife from 3 to 4, and by generally following the directions described for carving boiled fowl.
